A classic dairy-free pareve dessert that needs no alternatives

The coconut macaroon is a much maligned dessert.  Most people enjoy (is that the right word to use) macaroons from a can over passover.  Our kosher bakery offers them all year round.  When you have them fresh with generous serving of dark chocolate slathered on the bottom, they are heaven.  Even non-coconut lovers are gobbling them up.  We have our own secret recipe, but are wiling to share it.  Intersted? Non dairy Buttermilk?! Give this a shot.

Whether you're baking or cooking, so many of the great recipes call for buttermilk.  It’s that ingredient that no one can ever place, but if it is missing you know something isn't quite right.  Southern fried chicken is soaked in it before coating, and what's a pancake batter without it?  Until now, so many kosher and non-dairy recipes have just left it out.  The result: blander taste without that sweet tang, and drier meats and baked goods. 

 

Next time you sigh and think “here’s another recipe I can't enjoy,” give this trick a shot: put a table spoon of distilled white vinegar into a measuring cup.  Add non-dairy soy milk until the combined mixture equals one cup and stir vigorously.  You've got non-dairy buttermilk.  Just add it to your recipes as you would regular buttermilk.  Boring dishes be gone!
